I’ll never forget how blown away I was when I tasted peanut butter for the first time a bit after I moved to this country as a teenager. I’d never ever tasted it before and, as a big peanut fun, I just couldn’t believe how good it tasted and how I could it eat it in a variety of ways: by the spoonful, on PB&J sandwiches — which were, to me, the epitome of an American snack or lunch box — or as one of the main ingredients in a bowl of chocolate ice cream with chocolate syrup and sliced bananas topped with some sort of cereal. Yum! (Actually, I think I’d die if I ate anything close to that now!)
As I got older, my love affair with peanut butter dwindled. But then, I became a mamá and I quickly remembered how much I loved it and why!
So here’s a super quick and easy snack I make for mis niños which is not only yummy, but super healthy. Although they’re called “quesadillas,” they don’t really have any cheese, it’s just the concept behind them.
- Tortillas (the recipe calls for flour tortillas, but I prefer corn)
- Peanut butter, chunky or creamy
- Ripe babana sliced
- PAM cooking spray
- Cinnamon to taste
1. Spread a hefty spoonful of peanut butter onto the tortilla and top it with a few banana slices.
2. Give the skillet a quick spray of PAM, I alternate between the butter flavor or the original one, and set the burner on medium heat.
3. Place folded tortilla in the skillet, and heat 2 minutes on each side, until lightly browned.
4. Let the tortilla cool a little bit. The peanut butter is nice and gooey, but also hot!
5. Slice into wedges, sprinkle some cinnamon ¡y a comer!

I think I just found a new 3 pm snack. Cooking spray, tortillas, peanut butter and bananas are things I almost ALWAYS have on hand even when there isn’t much else to eat.
I also love peanut butter and so do the kids. Carlos took a few years to come around but now he eats a peanut butter and jelly sandwich every day during his mid-morning work break

I totally agree with Tracy because I, also, have all these ingredients in my home all the time. I actually don´t use peanut butter, but almond or sunflower butter. Those are also great alternatives for anyone with peanut allergies.
